Bernie’s Holiday Restaurant Names José Valines Executive Chef

Chef José Valines brings farm to table passion and big-city experience to Sullivan County restaurant.

 

Rock Hill, NY (Feb. 2, 2018) – Bernie’s Holiday Restaurant/BHR, a new-American steakhouse and fish house in Sullivan County, is excited to announce the appointment of José Manuel Valines as executive chef. Valines will be overseeing all culinary operations at BHR, its catering division, BHR Caterers, and its sister restaurant, Crust Italian Eatery.

 

Valines brings with him more than 10 years of culinary experience, ranging from executive chef to front-of-house operations. Most recently, he worked as chef de cuisine for Coyo Taco and executive chef for Gigi, in Miami.

 

“We’re excited to welcome Chef José Valines to our team at BHR and Crust,” said Chef-Owner Randy Resnick. “Chef Valines is a culinary talent with the creativity, experience, and drive we’re looking for to take our restaurants to the next level. We can’t wait to introduce him and his creations to the Sullivan County Catskills.”

 

Valines, who grew up in San Juan, Puerto Rico, is a chef with a deep-rooted farm to table philosophy. He began developing his love for the sustainable table concept early on by doing daily chores in his parent’s garden as a child in the mid-‘80s. At the age of 12, he started work in a professional kitchen cleaning seafood—he learned kitchen operations and progressed to helping the chefs with daily production, which inspired him to study the culinary profession.

 

In 1999, Valines left his home in Puerto Rico to attend the prestigious Culinary Institute of America in Hyde Park, New York. Learning strict fundamentals and living the school’s mantra of “preparation is everything,” he was able to refine his technique. With the school set in the agriculturally rich Hudson Valley, Valines honed in on the local, fresh, and simple-yet-elegant food philosophy that excited him as a child.

 

Valines has held various positions at award-winning restaurants and caterers in New York City, Puerto Rico, Miami, and the Hudson Valley, giving him an extensive view of the hospitality industry.

 

“As a chef, I love to constantly challenge food and to share my passion with the community,” said Valines. “I’m excited to be back in the area and working at a restaurant that shares my love for seasonal and fresh food. I plan on bringing amazing, unpretentious, and mouth-watering new dishes to BHR.”
